This post is a little different for me because it is not about horses. It’s about another side of me which few people know. I Love to cook but since I became a Parelli Instructor several years ago I’ve kinda abandoned the kitchen.
In this Video I show you how a make a simply pot of southwest beans. I share several cooking tips along the way. Enjoy!
2 lbs of Dry Pinto Beans
Stock or water as needed (around 32 oz)
1 Can of Rotel or Diced Tomatoes & Green Chiles
1 Medium Diced Onion
1/2 lb thick Sliced Bacon
1 tsp. Oregano
Salt & Pepper
Optional extra green chilies
Wash the Beans and check for stones and duds add to Crock pot or slow cooker.
Fry the bacon and save the fat for the onions.
Sautee onions in bacon fat. Drain off fat add to pot.
Chop bacon and add to pot.
Add stock to pot. Cover beans by about 1/2 inch.
Add pepper and Oregano.
Cook on high for 2hrs then turn down to low.
Check fluid level and add more fluid (stock, broth or water ) as needed.
Cook on low for 20 to 24 hours.
